« A WHITE TABLECLOTH, IMPECCABLY IRONED, ON WHICH AN EGG MAYONNAISE WAITS PATIENTLY ON ITS PORCELAIN PLATE; a pinball machine flashing a few meters away, while a cup of coffee steams on a zinc counter… Today, more than a form of snobbery, the return to classics—on our tables and in restaurants—has become a lasting trend. Even the irreverent Fooding guide— which reshaped the way we dine (p. 199) —now champions this traditional style, albeit with a contemporary twist. Classics, whether tasteful or not, are resurfacing on our tables and in our dishes. Alongside silverware, we gladly welcome shrimp cocktail, bread sculptures, and fuchsia-pink paper umbrellas slipped into glasses of Get 27.
